But for one special weekend every summer, the entire city completely transforms. The shop windows, the clothing, and most importantly, the food, all turn a bright, shocking shade of pink.

This cold beetroot soup is a famous summer staple across Eastern Europe, but in Lithuania, it is treated with absolute reverence. To honour this unique culinary delicacy, thousands of locals and tourists gather in the city centre to eat, dance, and celebrate the iconic pink meal.
So, what exactly is in this famous soup? The striking colour comes from mixing grated beetroot with kefir, which is a slightly sour, fermented milk drink. Chefs then carefully blend in a variety of fresh ingredients, including chopped cucumbers, spring onions, and fresh dill, before topping it with half a hard-boiled egg. It is always served icy cold, making it the perfect way to cool down during the hot Baltic summer. Traditionally, it is accompanied by a side plate of hot, salty boiled potatoes to perfectly balance the flavours on the palate.
